Teriyaki Salmon with Vegetables

Teriyaki Salmon with Vegetables

Ingredients:

  • 4 salmon fillets
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 2 tablespoons rice vinegar
  • 2 tablespoons mirin (Japanese rice wine)
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 tablespoon grated fresh ginger
  • 2 cups mixed vegetables (such as broccoli, bell peppers, and carrots), sliced
  • Sesame seeds for garnish (optional)
  • Sliced green onions for garnish (optional)


Instructions:

  • Preheat the oven to 400°F (200°C). Line a baking sheet with foil and lightly grease with cooking oil.
  • In a small bowl, whisk together soy sauce, honey, rice vinegar, mirin, sesame oil, minced garlic, and grated ginger to make the teriyaki sauce.
  • Place the salmon fillets on the prepared baking sheet. Brush the teriyaki sauce onto the salmon.
  • Toss the mixed vegetables in the remaining teriyaki sauce and arrange them around the salmon on the baking sheet.
  • Bake in the preheated oven for 12-15 minutes or until the salmon is cooked through and the vegetables are tender.
  • Remove from the oven and garnish with sesame seeds and sliced green onions if desired. Serve hot.
